Backpacking travel insurance for non UK residents

Hi, With my boyfriend (who is French) we have booked to go backpacking for roughly a year leaving from London in October. We booked through an English company as I have friends who recommended them and I didn't forsee it being an issue. My problem now though is that I have been resident in France for the past two years (my boyfriend lived in England for three months two years ago) and every English travel insurance company I've tried has said no as we haven't been resident in the UK for the last 6 months. We will be moving to England in the month prior to our trip to stay with my parents and we plan on coming back to the UK afterwards. French travel insurance for this type of trip is roughly 5 times the price (quotes of over 1000€ per person) and also is no good as we are flying from/to the UK. I am completely stumped as I don't want to lie to my insurance company and invalidate my insurance, but at the same time they seem to make no exceptions. If asked to prove residency we both have bank statements going to my parents address in the UK but I don't know if this is enough. Do you have any advice please??
