You can park for up to 2 hours for free in either terminal's Long Stay car park, which could be perfect if you are dropping off or picking up a passenger, however, this isn't suitable as a long-term parking solution. You'll also need to factor in the transfer time of around 15 minutes from the car park to the terminal.
Can you walk from Premier Inn to Gatwick North Terminal?
You can indeed, the Premier Inn North hotel is just over the road from the North Terminal at Gatwick, a nice simple walk, and if you're flying from the South Terminal you can catch the free monorail from North Terminal, it'll have you there in just a few minutes.
